Peach Cobbler Cookies

Serves: 4 1/2 dozen cookies
Vegetarian!
Ingredients
1 cup
Butter (softened)
1 cup
Sugar
1/3 cup
Packed brown sugar
1 large
Egg (room temperature)
1 teaspoon
Vanilla extract
1/4 teaspoon
Almond extract
3 cups
All-purpose flour
1 1/2 teaspoons
Ground cinnamon
1 teaspoon
Cream of tartar
1 teaspoon
Baking soda
1/2 teaspoon
Salt
1/4 teaspoon
Ground nutmeg
1 cup
Fresh peaches (peeled & chopped)
Vanilla ice cream for serving
Step by Step Instructions
- Preheat oven to 350 degrees and prepare baking sheets with parchment. Whisk the flour, cinnamon, cream of tartar, baking soda, salt and nutmeg together in a bowl. Set aside.
- Cream the butter & sugars together, stirring for 5 to 7 minutes, then beat in the egg & extracts. Gradually stir in the dry mixture, then once wall mixed, stir in the peaches.
- Working in batches, bake the cookies 2 inches apart on the prepared baking sheets for 14 to 16 minutes. Cool for 2 minutes, then set onto wire racks to cool fully.
